Balsamic Pork Loin

  • 2 Tablespoons Guido's Roasting Mix
  • 1/2 CupThe Enchanted Olive 25 Star Balsamic
  • 1/4 Cup The Enchanted Olive Garlic Mushroom EVOO
  • 2 lbs Boneless Pork Loin Roast

Dissolve spice mix in balsamic vinegar, then stir in olive oil. Place pork into a resealable plastic bag and pour marinade overtop. Squeeze out air and seal bag; marinate 2 hours to overnight.

Preheat oven to 350 degrees

Place pork in a glass baking dish along with marinade. Bake in preheated oven, basting occassionally until pork reached an internal temperature of 145 degrees, about 1 hour. Let the roast rest for 10 minutes before slicing and serving.

Orange Expresso Pork Loin

Preheat oven to 350 degrees

  • 1/3 cup The Enchanted Olive Dark Chocolate Expresso Balsamic
  • 1/2 Orange Juice
  • 1/4 Cup The Enchanted Olive Roasemary EVOO
  • 1 1/2 Teaspoons Chopped Garlic
  • 1 Red Onion, sliced
  • 1 (5 pound) Boneless Pork Loin Roast

In a medium bowl, stir together the orange juice, balsamic, rosemary EVOO, red onion slices and garlic. Place the pork loin in a baking bag and set in a roasting pan or baking dish. Pour the orange juice mixture over the roast, making sure to coat entirely. Close bag according to package instructions.

Bake for 2 to 2 1/2 hours in the preheated oven, until the internal temperature of the loin is at least 145 degrees. Remove from the oven and let stand for about 10 minutes to settle the juices. Carefully open the bag and remove the roast. Slice and serve with a little drippings drizzled over top.

Balsamic and Honey Glazed Ham

  • 1 (5 pound) ready-to-eat ham
  • 1/4 Cup Whole Cloves
  • 1/4 Cup The Enchanted Olive Pineapple in White Balsamic Vinegar
  • 2 Cups Honey
  • 1/2 Cup The Enchanted Olive Butter EVOO

Preheat oven to 325 degrees

Score ham and stud with the whole cloves. Place ham in foil lined pan.

In the top half of a double broiler, heat the balsamic vinegar, honey and butter EVOO. Keep glaze warm while baking.

Brush glaze over ham and bake for 1 hour 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the glaze. During the last 4 to 5 minutes of baking, turn on broiler to carmelize the glaze. Remove from oven and let sit a few minutes before serving.
